Delicious Chicken and Courgette Fritters

I love creating recipes like this Chicken and Courgette Fritters. The reasons are:

  • They taste so damn good,
  • Healthy because they contain protein and vegetables
  • It’s pan fried instead of shallow fried to avoid the fritters absorbing the oil and making it unhealthy. So a very small amount of oil needed for this recipe
  • The kids love it, because these fritters are small, cute and tastes good.

 


So, without further ado, let’s get down to making these beautiful little flavour bombs.

 

Instructions for cooking Chicken and Courgette Fritters

Cut the chicken into cubes, so it’s to blend in the food processor with other ingredients

Add chicken to the blender

Marinade:

Add spices to the mixture

 

Put the ingredients in a food processor with the chicken

Add courgette to the blender

 

Add an egg to the food processor, which will act as a combining agent.

Blend for about 30 seconds, until all the ingredients are blended but not pureed. You need to have texture and crunch; no one wants pureed food.

Squeeze in a lime juice to the mixture. If the mixture seems wet, then hold off adding the juice.

Leave the chicken marinade mixture in the fridge to marinate for about 1 hour, at least. I left it overnight, so if you can prepare in advance, I would advise that.

Cooking:

When ready to cook, take the marinade out of the fridge and leave it in the room temperate for about 30 minutes.

Tip: I find that the meat dries out when they are cooked from cold. So I always prefer to get them to room temperature before cooking.

 

On a non-stick skillet, pour about 2 tbsp of olive oil and get the oil nice and hot.

Place about 1 tbsp of mixture on to the skillet and flatten it slightly so it’s in a circle shape.

Fry the fritters about 3 to 4 minutes on each side at a medium heat.

Place the fried fritters on a kitchen towel initially to abord any excess oil (there shouldn’t be much oil since its pan fried)

When ready to serve, place them on a nice plate and serve.

Healthy Chicken and Courgette Fritters

These Chicken and Courgette Fritters are simple and easy to make and great as a canapés, snacks and even as a meal

Ingredients

  • 500 g Chicken breasts
  • 1 Courgette
  • 1 Carrot Optional, if you are using carrots, then reduce the amount of courgette used
  • 1 tsp Chilli paste
  • 1/2 tsp Turmeric
  • 1/2 Chilli powder
  • 1/2 tsp Salt
  • 1/4 tsp Pepper
  • 4 Garlic chopped
  • 3 Green chillies chopped (if you are making this for your kids, you don’t have to use it or reduce it to maybe 1 chilli)
  • 1/2 Lime juice
  • 2 tbsp Olive oil and about 2 tbsp for frying
  • 1 Egg
  • Handful Coriander chopped

  3. Place about 1 tbsp of mixture on to the skillet and flatten it slightly so its in a circle shape.
  4. Fry the fritters about 3 to 4 minutes on each side at a medium heat.
  5. Place the fried fritters on a kitchen towel initially to absorb any excess oil (because its pan fried, there shouldn't be much oil absorbed by the fritters)

  6. When ready to serve, place them on a nice plate and serve.

Vegetarian Fritters:

If you want a vegetarian version, adding cauliflower instead of chicken and carrots to the mixture is a great recipe. Instead of egg to bind the mixture, you can use flour.
