Flo’s Healthy Popcorn Chicken
Popcorn chicken, yummmm….. How many of you thought of KFC, when I mentioned, ‘popcorn chicken’. Haha, I thought so 🙂
Every time I walk past KFC and I get the waft of the friend food, I always crave for KFC popcorn chicken but I build a courage and say ‘No’, well, most of the time anyways 😉 sometimes the hunger takes over and you just give in.
So I decided to make a healthy version of the popcorn chicken using my trusty Air fryer, and the result was a success. My daughter finished all hers that evening and asked for more the next day. She is such a fussy eater and there is only handful of food she likes, so I know this was a success.
Instruction for Flo’s Popcorn Chicken:
Cut the chicken breasts into small pieces. Marinate the chicken breasts with turmeric powder, cumin powder, coriander powder, chilli powder, garlic paste, salt and pepper. Leave the chicken to marinade as long a you can but its not necessary.
Beat the egg and pour an amount that’s just enough to cover the marinated chicken pieces. You don’t want the chicken pieces getting soggy from too much egg.
Now transfer the chicken into the bowl with breadcrumbs. If you have time and you own a dry spice blender, then give the breadcrumbs a quick blend. The fine texture will give the chicken pieces even better coverage.
Now transfer the breaded chicken pieces into the Air fryer and pour 2 tablespoons of Rapeseed oil, all over the chicken pieces. You can use any oil with high smoke point but I prefer Rapeseed oil’s taste and I read its healthier as it contains the least saturated fat of all oils.
Air fryer cooks the food by circulating the hot air around the food so you don’t need much oil at all but chicken breasts is a lean cut so 2 tablespoons is more than enough for the crispy fried texture finish. Turn the Air fryer on for about 10 minutes. Check the big chicken piece to ensure that it’s cooked inside as the different sizes of chicken will cook at different time.
Now serve the popcorn chicken with a little bit of mayonnaise, ketchup or sweet chilli sauce.
My daughter, the fussy eater had them straight up, she loved it.
Flo’s Popcorn Chicken
Healthy bite-sized pieces of chicken that have been breaded and fried. Great for a snack and kids love them.
- 2 Chicken breasts – cut into small pieces
- ¼ tsp Turmeric
- ¼ tsp Cumin powder
- ¼ tsp Coriander powder
- ½ tsp Chilli powder
- ¼ tsp Black pepper powder
- Salt to taste
- 1 Egg whisked
- About 70 g Breadcrumbs
- 2 tbsp Rapeseed oil or any oil with high smoke point
Marinade the chicken with all the spices and leave it to a side for the spices to absorb into the meat
Pour just enough whisked egg into the chicken marinade to coat the chicken evenly
Now transfer the chicken pieces into the dish that contains breadcrumbs and move the chicken around using a spoon (or hand) to coat the chicken pieces well so the breadcrumbs will stick to the chicken pieces
Now transfer the breadcrumbs coated chicken pieces into the Air fryer’s try
Pour the oil on top of the chicken pieces
Turn the air fryer on and cook for about 10 minutes
Once it’s done, check the middle of the biggest chicken piece to ensure its cooked through.
