Five-spice powder is commonly used ingredient in Chinese and Taiwanese cuisine. I still haven’t been to China but I was lucky enough to experience some authentic dishes with five spice when I was in Taipei, capital of Taiwan. Five-spice is usually a mixture of star anise, cinnamon, cloves, fennel and Sichuan pepper, giving out the flavours of sweet, sour, bitter, pungent and salty.

How to make Healthy Five spice marinated Chicken thighs
Normally its best to score the meat so that it will allow the spice to penetrate the meat and flavour well. I didn’t do it this time but I would definitely recommend scoring it if you have the opportunity.
In a bowl, mix all the ingredients, lemon juice, fish sauce, soy sauce, white wine vinegar, crushed red chilli or chilli sauce, garlic and ginger paste, and finally the hero Five spice. mix them and taste before adding salt as fish and soy sauce contains salt in them.
Tip the mixture into the bowl with chicken and mix and massage the chicken well to make the chicken soft and for the flavour to penetrate the meat.
Cover the chicken with clingfilm and leave it in the fridge overnight. If it’s not possibly, then at least 6 hours.
When ready to cook, take the chicken out of the fridge and leave it in the room temperature for about 30 minutes. The meat will cook evenly if its cooked from the room temperature rather than from a cold, which will dry out the meat before being cooked.
Place the chicken in the air-fryer for about 25 to 30 minutes
